A compliant hood cleaning includes: complete degreasing of the hood canopy, all grease filters, the entire ductwork system from hood to exhaust fan discharge, and the exhaust fan and housing. The technician should leave a dated sticker on the equipment and provide a compliance certificate.

Reduced ice production is usually caused by: mineral scale buildup on evaporator plates reducing heat transfer, dirty condenser coils reducing refrigeration efficiency, warm ambient temperature in the equipment room, low refrigerant levels, or water flow problems. The fix for scale buildup is professional cleaning and descaling. Other issues require a technician. Never ignore reduced production — it often progresses to complete failure.

Signs of compressor problems: unit not reaching temperature despite running constantly, compressor making loud knocking or grinding sounds, compressor starting and stopping rapidly (short cycling), compressor not starting at all, or high pressure shutdowns.
