CFESA (Commercial Food Equipment Service Association) certification is the industry standard for commercial kitchen equipment technicians. Certified technicians have passed rigorous examinations on electrical, refrigeration, and gas systems. A compliant hood cleaning includes: complete degreasing of the hood canopy, all grease filters, the entire ductwork system from hood to exhaust fan discharge, and the exhaust fan and housing. Areas that cannot be thoroughly cleaned must be documented. Cleaning must be performed by a qualified company and documented with service report and before/after photos. The technician should leave a dated sticker on the equipment and provide a compliance certificate.

NFPA 96 (Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations) requires cleaning frequency based on cooking volume: monthly for solid fuel cooking (wood, charcoal); quarterly for high-volume cooking (24-hour operations, charbroiling); semi-annually for moderate-volume cooking; and annually for low-volume cooking (pizzerias, churches, seasonal businesses). Your local fire marshal may have additional requirements. Failure to comply can void your fire suppression system coverage.
