A compliant hood cleaning includes: complete degreasing of the hood canopy, all grease filters, the entire ductwork system from hood to exhaust fan discharge, and the exhaust fan and housing. Areas that cannot be thoroughly cleaned must be documented. Cleaning must be performed by a qualified company and documented with service report and before/after photos. The technician should leave a dated sticker on the equipment and provide a compliance certificate.

Oil quality directly affects fryer performance and longevity. Degraded oil causes: higher operating temperatures needed, longer cook times, off-flavors, and increased carbon buildup on heating elements and thermostat probes. Proper oil management includes: filtering daily, testing oil quality with strips or meters, full oil changes based on usage (typically every 1-3 weeks), and cleaning the fryer tank when changing oil. Common causes include: faulty igniter or ignition module, failed heating element (electric ovens), thermostat or temperature probe failure, gas valve issues, or clogged burner ports. Start by checking error codes on the control panel if equipped. If the oven lights but doesn't reach temperature, the thermostat or temperature probe is often the culprit.
