The hi-limit switch is a safety device that cuts power when fryer temperature exceeds safe limits. Common causes: faulty thermostat allowing oil to overheat, failing hi-limit switch itself, improper temperature settings, low oil level exposing heating elements, or carbon buildup insulating heating elements. Signs of compressor problems: unit not reaching temperature despite running constantly, compressor making loud knocking or grinding sounds, compressor starting and stopping rapidly (short cycling), compressor not starting at all, or high pressure shutdowns. Reduced ice production is usually caused by: mineral scale buildup on evaporator plates reducing heat transfer, dirty condenser coils reducing refrigeration efficiency, warm ambient temperature in the equipment room, low refrigerant levels, or water flow problems.
