The hi-limit switch is a safety device that cuts power when fryer temperature exceeds safe limits. Common causes: faulty thermostat allowing oil to overheat, failing hi-limit switch itself, improper temperature settings, low oil level exposing heating elements, or carbon buildup insulating heating elements. Combi oven steam issues are commonly caused by: clogged steam generator or boiler scale buildup, failed heating element in the steam generator, water inlet valve problems, or steam nozzle blockages. Mineral scale from hard water is the most common culprit and can be prevented with regular descaling. A combi oven specialist should inspect the steam system as improper repairs can damage the boiler.

Commercial fryer safety checks include: verifying hi-limit switch operation, checking thermostat accuracy, inspecting gas connections and pressure (gas fryers), testing electrical connections (electric fryers), checking oil filtration system function, inspecting drain valve operation, verifying fire suppression system compatibility, and checking for oil leaks. Safety checks should be performed by a certified technician at every service visit.
