Proper oil management includes: filtering daily, testing oil quality with strips or meters, full oil changes based on usage (typically every 1-3 weeks), and cleaning the fryer tank when changing oil. Poor oil management is a leading cause of premature fryer failure.

A compliant hood cleaning includes: complete degreasing of the hood canopy, all grease filters, the entire ductwork system from hood to exhaust fan discharge, and the exhaust fan and housing. Areas that cannot be thoroughly cleaned must be documented. Cleaning must be performed by a qualified company and documented with service report and before/after photos. The technician should leave a dated sticker on the equipment and provide a compliance certificate.

Signs your oven needs calibration: food is consistently undercooked or overcooked at standard settings, cooking times are significantly longer or shorter than expected, the displayed temperature doesn't match an independent thermometer reading.
